These butterscotch cookie bars are chewy, buttery, and packed with butterscotch chips. This is a quick one-bowl dessert baked in a sheet pan, perfect for a fast, no-fuss treat.
Ingredients
- 1 2 cup unsalted butter softened
- 2 cups light brown sugar packed
- 2 large eggs room temperature
- 2 teaspoons vanilla powder
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 2 teaspoon salt
- 1 cup butterscotch chips
Instructions
- Preheat the oven to 350°F. Line a 9 by 13 inch baking pan with parchment paper and lightly grease the paper.
- Beat the butter and brown sugar in a large bowl for 2 to 3 minutes until smooth and creamy.
- Add the eggs and vanilla powder. Mix until fully combined.
- Whisk together the flour, baking powder, and salt in a separate bowl.
- Add the dry ingredients to the wet mixture. Mix just until combined.
- Fold in the butterscotch chips evenly throughout the batter.
- Spread the dough evenly into the prepared pan.
- Bake for 28 to 32 minutes until the center is just set and the top is lightly golden.
- Cool for at least 30 minutes before slicing for clean bars.
Notes
- For softer bars, remove from the oven when the center is slightly underbaked.
