Description

These butterscotch cookie bars are chewy, buttery, and packed with butterscotch chips. This is a quick one-bowl dessert baked in a sheet pan, perfect for a fast, no-fuss treat.


Ingredients

  • 1 2 cup unsalted butter softened
  • 2 cups light brown sugar packed
  • 2 large eggs room temperature
  • 2 teaspoons vanilla powder
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 2 teaspoon salt
  • 1 cup butterscotch chips


Instructions

  1. Preheat the oven to 350°F. Line a 9 by 13 inch baking pan with parchment paper and lightly grease the paper.
  2. Beat the butter and brown sugar in a large bowl for 2 to 3 minutes until smooth and creamy.
  3. Add the eggs and vanilla powder. Mix until fully combined.
  4. Whisk together the flour, baking powder, and salt in a separate bowl.
  5. Add the dry ingredients to the wet mixture. Mix just until combined.
  6. Fold in the butterscotch chips evenly throughout the batter.
  7. Spread the dough evenly into the prepared pan.
  8. Bake for 28 to 32 minutes until the center is just set and the top is lightly golden.
  9. Cool for at least 30 minutes before slicing for clean bars.

Notes

  • For softer bars, remove from the oven when the center is slightly underbaked.
