Description
This Buffalo Chicken Dip is a fast, crowd-pleasing appetizer ideal for busy weeknights, game nights, and casual gatherings. Using rotisserie chicken and a simple stir-and-bake method, it turns out ultra creamy, cheesy, and perfectly spicy with minimal prep.
Ingredients
- 8 ounces cream cheese, softened
- 1 cup ranch dressing
- 1/2 cup hot sauce
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon black pepper
- 2 cups cooked shredded chicken
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons thinly sliced green onions
- For serving (Tortilla chips, Celery sticks, Carrot sticks, Crackers)
Instructions
- Set your oven to 350°F. Lightly grease a 1–1.5 quart baking dish.
- In a large bowl, mix the cream cheese, ranch dressing, hot sauce, garlic powder, onion powder, smoked paprika, and black pepper until you achieve a smooth base.
- Stir in the shredded chicken, 3/4 cup of the cheddar cheese, and 3/4 cup of the mozzarella cheese until everything combines evenly.
- Spread this mixture into your prepared baking dish. Top the dip with the remaining cheddar and mozzarella cheeses.
- Bake for 20–25 minutes. The edges should bubble, and the cheese topping should melt and turn lightly golden.
- Allow the dip to rest for 5 minutes to thicken before you sprinkle it with green onions.
- Serve this warm dip with tortilla chips, celery, carrots, and crackers.

- Use room temperature cream cheese for the smoothest dip.
- Shred your own cheese for better melt quality and reduced oil separation.
- Chop or finely shred the chicken so the dip scoops easily.
- You can warm the mixture on the stovetop before baking for more even heating.
