Description

Juicy, savory baked tomatoes with a golden cheesy topping, perfect as a quick side dish.


Ingredients

  • 4 large ripe tomatoes
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon plain breadcrumbs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat your oven to 400°F.
  2. Slice the tomatoes in half crosswise and place them cut side up in a lightly greased baking dish.
  3. Drizzle the tomatoes with olive oil.
  4. Sprinkle the tomatoes evenly with salt, black pepper, garlic powder, and Italian seasoning.
  5. Top each tomato half with mozzarella cheese and Parmesan cheese.
  6. Sprinkle breadcrumbs evenly over the tops for a lightly crisp finish.
  7. Bake for 18 to 22 minutes until the tomatoes are tender and the cheese is melted and lightly golden.
  8. Remove from the oven and sprinkle with fresh parsley before serving.
