Ingredients
- 1 pound ground beef (80/20 lean-to-fat ratio)
- 1 medium yellow onion, finely diced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup water
- 2 cups long-grain white rice
- 4 cups water
- Pinch of salt
- 2 cups shredded lettuce
- 2 medium tomatoes, diced
- 1 cup shredded cheddar cheese
- Optional: sliced black olives, jalapeños, cilantro, sour cream, guacamole
Instructions
- Rinse rice until the water runs clear. In a medium pot, bring 4 cups of water and a pinch of salt to a boil. Add rice, cover, and simmer on low for 18–20 minutes. Remove from heat and let stand 5 minutes. Fluff with a fork.
- In a large skillet over medium-high heat, add ground beef and diced onion. Cook for 8–10 minutes, breaking the meat into small crumbles, until browned. Drain excess fat.
- Add chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper to the skillet. Stir well.
- Pour in ½ cup water and simmer for 5 minutes, stirring occasionally, until the liquid thickens and coats the beef.
- Divide rice into bowls. Spoon the seasoned beef over the rice.
- Layer lettuce, diced tomatoes, and shredded cheese. Add any additional toppings like jalapeños or sour cream.
- Enjoy warm, letting the heat from the beef melt the cheese for the perfect bite.

- For extra flavor, toast the rice in a teaspoon of oil before adding water to deepen its nutty aroma.
