Description

Ingredients

  • 3 tablespoons coconut cream
  • 2 tablespoons coconut syrup
  • 2 tablespoons fresh lime juice
  • 1 tablespoon heavy cream
  • 2 cups crushed ice or pebble ice
  • 12 ounces chilled Diet Coke
  • 2 large scoops vanilla ice cream
  • 2 tablespoons sweetened shredded coconut
  • 1 fresh lime, cut into wheels
  • Whipped cream for topping


Instructions

  1. Fill a tall glass with crushed ice, leaving room at the top for ice cream and foam.
  2. Add coconut syrup and fresh lime juice directly over the ice, then stir gently to distribute the flavors throughout the glass.
  3. Drizzle coconut cream and heavy cream around the inside edges of the glass, allowing them to cascade down through the ice.
  4. Slowly pour the chilled Diet Coke down the side of the glass to minimize fizzing, filling to about three-quarters full.
  5. Add two generous scoops of vanilla ice cream on top, pressing down slightly so they rest securely in the glass.
