Description
These cupcakes combine the flavor of cinnamon rolls with a soft cupcake and cream cheese frosting.
Ingredients
- For the cupcakes:
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 1/2 cup unsalted butter softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup whole milk
- For the cinnamon swirl:
- 1/4 cup unsalted butter melted
- 1/3 cup brown sugar
- 1 tablespoon ground cinnamon
- For the frosting:
- 8 ounces cream cheese softened
- 1/4 cup unsalted butter softened
- 2 cups powdered sugar
- 2 tablespoons heavy cream
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F. Line a 12 cup muffin pan with cupcake liners.
- In a medium bowl, whisk together the flour, baking powder, ground cinnamon, and sea salt.
- In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Add the dry ingredients and milk alternately, beginning and ending with the dry ingredients. Mix until just combined.
- In a small bowl, stir together the melted butter, brown sugar, and cinnamon for the swirl mixture.
- Fill each cupcake liner halfway with batter. Add a spoonful of the cinnamon swirl mixture, then top with more batter until each liner is about three quarters full.
- Use a toothpick or skewer to gently swirl the cinnamon mixture into the batter.
- Bake for 18 to 22 minutes until a toothpick inserted into the center comes out clean.
- Cool the cupcakes completely before frosting.
- For the frosting, beat the cream cheese and butter until smooth. Add the powdered sugar, heavy cream, and vanilla extract. Beat until creamy and fluffy.
- Frost the cooled cupcakes and lightly dust with cinnamon if desired.
Notes
- For extra cinnamon roll flavor, warm the cupcakes slightly before serving so the cinnamon swirl becomes soft and gooey.
