These delicious cottage cheese bites are a high-protein snack with cinnamon apple flavor, made with simple ingredients.
Ingredients
- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or 1 small grated apple
- 1 large egg
- 1/2 tsp cinnamon
- 1 tbsp honey or maple syrup (optional)
- 1/2 tsp baking powder
- A pinch of salt
Instructions
- Preheat your oven to 350°F and grease a mini muffin pan.
- In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup (if using), baking powder, and salt.
- Mix everything together until well combined.
- Let the batter rest for 5 minutes for the oats to absorb moisture.
- Scoop the batter evenly into the mini muffin pan, filling each cup almost to the top.
- Bake for 18–20 minutes, or until the bites are set and lightly golden brown on top.
- Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
