Description

These delicious cottage cheese bites are a high-protein snack with cinnamon apple flavor, made with simple ingredients.


Ingredients

  • 1 cup cottage cheese
  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • A pinch of salt


Instructions

  1. Preheat your oven to 350°F and grease a mini muffin pan.
  2. In a mixing bowl, combine cottage cheese, oats, applesauce or grated apple, egg, cinnamon, honey or maple syrup (if using), baking powder, and salt.
  3. Mix everything together until well combined.
  4. Let the batter rest for 5 minutes for the oats to absorb moisture.
  5. Scoop the batter evenly into the mini muffin pan, filling each cup almost to the top.
  6. Bake for 18–20 minutes, or until the bites are set and lightly golden brown on top.
  7. Let them cool in the pan for a few minutes before transferring to a wire rack to cool completely.
