Description

Viral TikTok Date Snickers Bark. This no-bake, naturally sweetened treat layers Medjool dates, peanut butter, and dark chocolate for a healthy candy bar experience.

Ingredients

  • 20 Medjool dates, pitted and soft
  • ⅓ cup natural peanut butter, drippy consistency
  • ½ cup roasted unsalted peanuts, roughly chopped
  • 1¼ cups dark chocolate chips, 70% cacao
  • 1 tablespoon coconut oil
  • Flaky sea salt, for finishing

Instructions

  1. Line a 9×9-inch baking pan or small rimmed baking sheet with parchment paper, leaving overhang on two sides.
  2. Arrange the pitted Medjool dates in a single layer on the pan, pressing them together to form one solid base. Press firmly until the dates stick and flatten slightly.
  3. Drizzle the natural peanut butter evenly over the date layer. Spread it into an even layer, reaching the edges.
  4. Sprinkle the chopped roasted peanuts evenly over the peanut butter layer. Press them down gently.
  5. Combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring, for 1 to 2 minutes total until melted and smooth.
  6. Pour the melted chocolate over the entire bark, spreading it evenly to cover all peanuts and reach the edges.
  7. Sprinkle flaky sea salt generously over the melted chocolate layer.
  8. Transfer the pan to the freezer and freeze for 40 to 60 minutes until the chocolate is completely set.
  9. Lift the bark out using the parchment paper overhang and cut into 16 to 18 squares or break into pieces.

Notes

  • Choose soft, fresh Medjool dates for proper pressing.
  • Use drippy natural peanut butter for easy spreading.
  • The coconut oil helps the chocolate set with a smooth finish.
  • Press the date layer firmly to prevent crumbling when cutting.
  • Let the bark rest briefly at room temperature before cutting to reduce chocolate cracking.
  • Store in an airtight container in the freezer for up to 3 months.
