Ingredients
- 20 Medjool dates, pitted and soft
- ⅓ cup natural peanut butter, drippy consistency
- ½ cup roasted unsalted peanuts, roughly chopped
- 1¼ cups dark chocolate chips, 70% cacao
- 1 tablespoon coconut oil
- Flaky sea salt, for finishing
Instructions
- Line a 9×9-inch baking pan or small rimmed baking sheet with parchment paper, leaving overhang on two sides.
- Arrange the pitted Medjool dates in a single layer on the pan, pressing them together to form one solid base. Press firmly until the dates stick and flatten slightly.
- Drizzle the natural peanut butter evenly over the date layer. Spread it into an even layer, reaching the edges.
- Sprinkle the chopped roasted peanuts evenly over the peanut butter layer. Press them down gently.
- Combine the dark chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring, for 1 to 2 minutes total until melted and smooth.
- Pour the melted chocolate over the entire bark, spreading it evenly to cover all peanuts and reach the edges.
- Sprinkle flaky sea salt generously over the melted chocolate layer.
- Transfer the pan to the freezer and freeze for 40 to 60 minutes until the chocolate is completely set.
- Lift the bark out using the parchment paper overhang and cut into 16 to 18 squares or break into pieces.
