A rich, moist dark chocolate cake layered with fresh blackberries and topped with chocolate frosting and berries.
Ingredients
- 2 cups all purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs
- 1 cup whole milk
- 1/2 cup sour cream
- 3/4 cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot brewed coffee
- 1 1/2 cups fresh blackberries
- 1 cup semisweet chocolate chips
- For the frosting:
- 1 cup unsalted butter softened
- 3 cups powdered sugar
- 3/4 cup unsweetened cocoa powder
- 1/4 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 cup melted dark chocolate
- 1 cup fresh blackberries for garnish
Instructions
- Preheat your oven to 350°F. Grease and line two 8 inch round cake pans with parchment paper.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, beat the granulated sugar, brown sugar, eggs, milk, sour cream, vegetable oil, and vanilla extract until smooth.
- Slowly mix the wet ingredients into the dry ingredients.
- Stir in the hot coffee until the batter is smooth. Gently fold in the blackberries and chocolate chips.
- Divide the batter evenly between the prepared cake pans.
- Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
- Cool the cakes in the pans for 10 minutes, then transfer them to wire racks to cool completely.
- For the frosting, beat the butter until creamy. Gradually add the powdered sugar and cocoa powder. Mix in the milk, vanilla extract, and melted dark chocolate until fluffy.
- Place one cake layer on a serving plate and spread frosting evenly on top. Add the second layer and frost the top and sides of the cake.
- Garnish with fresh blackberries before serving.
