Description

A fresh and vibrant salad with crisp cucumbers, juicy tomatoes, and creamy avocado tossed in a light lemon dressing.


Ingredients

  • 2 cups cucumber diced
  • 2 cups cherry tomatoes halved
  • 1 large avocado diced
  • 1/4 cup red onion finely sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh parsley chopped


Instructions

  1. In a large bowl combine cucumber, cherry tomatoes, avocado, and red onion.
  2. In a small bowl whisk together olive oil, lemon juice, salt, and black pepper.
  3. Pour dressing over the salad and gently toss to combine.
  4. Sprinkle with fresh parsley and toss lightly again.
  5. Serve immediately.
