Ingredients

Instructions
- Rinse cucumber under cold water, then slice into thin rounds about 1/8 inch thick and place in a large serving bowl.
- Rinse strawberries, pat dry, and remove green tops with a paring knife. Slice strawberries into 1/4-inch-thick pieces and add to bowl with cucumber.
- Whisk together olive oil, balsamic vinegar, and honey in a small bowl until honey dissolves completely and mixture is smooth.
- Add salt and black pepper to the dressing and whisk again until evenly combined.
- Pour dressing over cucumber and strawberries, then toss gently with a large spoon to coat all pieces without crushing the fruit.
- Stack mint leaves and slice into thin ribbons, then sprinkle over salad and toss once more to distribute evenly.
- Let salad rest for 10 minutes at room temperature to allow flavors to blend before serving.
