Description

This easy cucumber salad recipe is perfect for a refreshing summer side dish. It features thinly sliced English cucumbers and red onion in a sweet and tangy dressing made with white wine vinegar and honey or agave nectar. Fresh dill and chives add a burst of flavor. This recipe is simple enough for beginners and takes just minutes to prepare.

Ingredients

  • 2 English cucumbers, very thinly sliced
  • ½ large red onion, very thinly sliced
  • ¼ cup white wine vinegar
  • 1 tablespoon honey or agave nectar
  • 1 teaspoon sea salt
  • 2 tablespoons chopped fresh dill
  • Chopped fresh chives, optional, for garnish
  • Freshly ground black pepper

Instructions

  1. In a large bowl, toss together the cucumber, onion, vinegar, honey (or agave), and salt.
  2. Chill for 20 minutes.
  3. Transfer to a serving bowl, leaving any excess water behind.
  4. Sprinkle with the dill and chives, if desired.
  5. Season with several grinds of black pepper and serve.

Notes

  • For a less pungent onion flavor, soak the sliced red onion in ice water for 10 minutes before adding to the salad.
  • Adjust the sweetness of the dressing by adding more or less honey or agave nectar to your preference.
  • This salad is best served fresh, but can be stored in an airtight container in the refrigerator for up to 1 day.
