Description
This cucumber carrot salad is crisp, refreshing, and lightly spicy with a sesame and lemon dressing. It is a perfect quick, healthy side for any spring meal.
Ingredients
- 1 large cucumber, julienned or sliced thin
- 2 medium carrots, julienned
- 1 clove garlic, minced
- 2 tablespoons sesame seeds
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon soy sauce
- 1 teaspoon red chili flakes or gochugaru
- 1/2 teaspoon sugar or maple syrup
Instructions
- Wash and dry cucumber and carrots. Slice or julienne into thin strips. Place in a large bowl.
- In a small bowl, whisk together olive oil, lemon juice, soy sauce, chili flakes, and sugar until fully combined.
- Add minced garlic and parsley to the vegetables. Pour the dressing over the salad and toss well to coat evenly.
- Sprinkle sesame seeds on top and give a final toss.
- Serve immediately for a fresh, crisp bite or let sit for 10 minutes for the flavors to meld.
Notes
- Reduce or omit the chili flakes for a milder version.
