Ingredients

  • 70 g Brown Sugar
  • 70 g Sugar
  • 115 g Butter melted
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 220 g Plain Flour
  • 1 tbsp Cornflour
  • ½ tsp Baking Soda
  • ½ tsp Baking Powder
  • ½ tsp Salt
  • 90 g Butter softened
  • 90 g Cream Cheese
  • 250 g Icing Sugar
  • Vanilla Extract (for frosting)
  • Food colouring (optional)
  • Sprinkles (optional)


Instructions

  1. Pre-heat your oven to 175°C (350°F) and line a baking tray with baking paper.
  2. In a bowl, whisk together the brown sugar, sugar, and melted butter until combined.
  3. Add the egg and vanilla extract, then whisk again until smooth.
  4. Sift in the plain flour, cornflour, baking soda, baking powder, and salt. Gently fold these dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Roll the dough into 50g balls. Place these dough balls onto the prepared baking tray, ensuring they have enough space between them as they will spread.
  6. Refrigerate the dough balls for at least 1 hour. This step is key for a good crumbly texture.
  7. Bake the cookies in the pre-heated oven at 175°C (350°F) for 12 minutes.
  8. Once baked, let the cookies cool completely on the baking tray before decorating.
  9. While the cookies cool, prepare the frosting. In a separate bowl, whisk together the softened butter, cream cheese, and icing sugar for about 5 minutes until light and fluffy.
  10. Add a teaspoon of vanilla extract to the frosting and whisk until combined.
  11. If desired, add food colouring to the frosting and mix until you achieve your desired colour.
  12. Pipe or spread the cream cheese frosting onto the cooled cookies.
  13. Finish by adding sprinkles, if using.
