Description
Buttery, flaky croissant breakfast sandwiches filled with soft scrambled eggs and melted cheese, baked until golden.
Ingredients
- 4 large croissants sliced horizontally
- 8 slices melting cheese (cheddar or gouda)
- 1/2 pound sliced turkey or beef deli meat, cooked
- 8 slices beef breakfast strips, cooked
- 5 large eggs
- 2 tablespoons milk
- Salt
- Black pepper
- 1 tablespoon butter
- 2 tablespoons butter, softened
- 2 tablespoons honey
- 2 tablespoons dijon mustard
- Fresh chives, finely chopped (optional)
Instructions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper.
- Mix the softened butter, honey, and dijon mustard until smooth to create the spread.
- Brush the cut sides of the croissants with the honey mustard mixture.
- Layer the bottom halves of the croissants with one slice of cheese, deli meat, beef breakfast strips, and a second slice of cheese. Place the tops on the croissants.
- Arrange the sandwiches on the baking sheet. Bake for 10 to 15 minutes until the cheese melts and the croissants are golden.
- While the sandwiches bake, whisk together the eggs, milk, salt, and pepper.
- Melt 1 tablespoon of butter in a nonstick skillet over medium heat. Add the eggs and cook, stirring gently, for 2 to 3 minutes until softly scrambled.
- Remove the sandwiches from the oven. Lift the tops and divide the eggs evenly among the sandwiches.
- Sprinkle with chives if you use them, replace the tops, and serve warm.
Notes
- You can assemble the sandwiches without eggs and refrigerate them overnight. Bake and add the eggs just before serving.
