Description

Buttery, flaky croissant breakfast sandwiches filled with soft scrambled eggs and melted cheese, baked until golden.


Ingredients

  • 4 large croissants sliced horizontally
  • 8 slices melting cheese (cheddar or gouda)
  • 1/2 pound sliced turkey or beef deli meat, cooked
  • 8 slices beef breakfast strips, cooked
  • 5 large eggs
  • 2 tablespoons milk
  • Salt
  • Black pepper
  • 1 tablespoon butter
  • 2 tablespoons butter, softened
  • 2 tablespoons honey
  • 2 tablespoons dijon mustard
  • Fresh chives, finely chopped (optional)


Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Mix the softened butter, honey, and dijon mustard until smooth to create the spread.
  3. Brush the cut sides of the croissants with the honey mustard mixture.
  4. Layer the bottom halves of the croissants with one slice of cheese, deli meat, beef breakfast strips, and a second slice of cheese. Place the tops on the croissants.
  5. Arrange the sandwiches on the baking sheet. Bake for 10 to 15 minutes until the cheese melts and the croissants are golden.
  6. While the sandwiches bake, whisk together the eggs, milk, salt, and pepper.
  7. Melt 1 tablespoon of butter in a nonstick skillet over medium heat. Add the eggs and cook, stirring gently, for 2 to 3 minutes until softly scrambled.
  8. Remove the sandwiches from the oven. Lift the tops and divide the eggs evenly among the sandwiches.
  9. Sprinkle with chives if you use them, replace the tops, and serve warm.

Notes

  • You can assemble the sandwiches without eggs and refrigerate them overnight. Bake and add the eggs just before serving.
