Ingredients
- 1.5 lbs chicken breast
- 2 cans coconut milk
- 3 cups chicken broth
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- 3 tablespoons lime juice
- 2 tablespoons brown sugar
- 1 onion, chopped
- 2 red bell peppers, sliced thin
- 1 cup mushrooms, sliced
- Fresh cilantro, for garnish
Instructions
- Place chicken, coconut milk, broth, and curry paste in your crockpot. Stir to combine.
- Add soy sauce, lime juice, and brown sugar.
- Add chopped onion and sliced bell peppers.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, add sliced mushrooms and stir.
- Before serving, shred the chicken in the pot using two forks.
- Serve hot.
