Description

An easy slow cooker dinner featuring tender potatoes, savory turkey sausage, and a creamy cheese sauce.


Ingredients

  • 1 1/2 pounds Yukon Gold potatoes, peeled and sliced 1/4 inch thick
  • 1 pound turkey sausage, fully cooked and sliced into rounds
  • 1 small yellow onion, thinly sliced
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup whole milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil


Instructions

  1. Lightly grease the inside of a 6-quart slow cooker with olive oil.
  2. In a medium bowl, whisk together cream of chicken soup, milk, garlic powder, dried thyme, salt, and black pepper until smooth.
  3. Layer one third of the sliced potatoes evenly in the bottom of the slow cooker. Top with one third of the sliced turkey sausage and a few slices of onion. Sprinkle with 1/2 cup shredded cheddar cheese.
  4. Spoon one third of the soup mixture over the layer.
  5. Repeat the layers two more times, finishing with the remaining soup mixture on top.
  6. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours until the potatoes are fork tender and the casserole is hot throughout.
  7. Sprinkle the remaining 1/2 cup shredded cheddar cheese over the top during the last 20 minutes of cooking. Cover and allow the cheese to melt.
  8. Let the casserole rest uncovered for 10 minutes before serving to allow it to thicken slightly.
  9. Heat turkey sausage to an internal temperature of 165 degrees F before serving.
