Description
An easy slow cooker dinner featuring tender potatoes, savory turkey sausage, and a creamy cheese sauce.
Ingredients
- 1 1/2 pounds Yukon Gold potatoes, peeled and sliced 1/4 inch thick
- 1 pound turkey sausage, fully cooked and sliced into rounds
- 1 small yellow onion, thinly sliced
- 2 cups shredded sharp cheddar cheese, divided
- 1 (10.5 ounce) can cream of chicken soup
- 1 cup whole milk
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried thyme
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Lightly grease the inside of a 6-quart slow cooker with olive oil.
- In a medium bowl, whisk together cream of chicken soup, milk, garlic powder, dried thyme, salt, and black pepper until smooth.
- Layer one third of the sliced potatoes evenly in the bottom of the slow cooker. Top with one third of the sliced turkey sausage and a few slices of onion. Sprinkle with 1/2 cup shredded cheddar cheese.
- Spoon one third of the soup mixture over the layer.
- Repeat the layers two more times, finishing with the remaining soup mixture on top.
- Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours until the potatoes are fork tender and the casserole is hot throughout.
- Sprinkle the remaining 1/2 cup shredded cheddar cheese over the top during the last 20 minutes of cooking. Cover and allow the cheese to melt.
- Let the casserole rest uncovered for 10 minutes before serving to allow it to thicken slightly.
- Heat turkey sausage to an internal temperature of 165 degrees F before serving.
