Description

A simple and hearty Crockpot Sausage Casserole perfect for busy weeknights. This easy recipe combines sausage, potatoes, and vegetables for a delicious meal.


Ingredients

  • 1 lb beef smoked sausage, sliced into rounds
  • 4 medium potatoes, diced
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 tsp paprika
  • Salt and pepper to taste


Instructions

  1. Wash and dice the potatoes. Chop the onion and bell pepper. Slice the sausage into thick rounds.
  2. Add sausage, potatoes, onion, bell pepper, diced tomatoes (with juices), chicken broth, and paprika to your crockpot. Stir to combine.
  3. Cover and cook on low for 5-6 hours, or until potatoes are tender.
  4. Stir the casserole. Season with salt and pepper if desired. Serve warm.

Notes

  • Baby potatoes can be substituted for diced potatoes.
