A simple and hearty Crockpot Sausage Casserole perfect for busy weeknights. This easy recipe combines sausage, potatoes, and vegetables for a delicious meal.
Ingredients
- 1 lb beef smoked sausage, sliced into rounds
- 4 medium potatoes, diced
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Wash and dice the potatoes. Chop the onion and bell pepper. Slice the sausage into thick rounds.
- Add sausage, potatoes, onion, bell pepper, diced tomatoes (with juices), chicken broth, and paprika to your crockpot. Stir to combine.
- Cover and cook on low for 5-6 hours, or until potatoes are tender.
- Stir the casserole. Season with salt and pepper if desired. Serve warm.
Notes
- Baby potatoes can be substituted for diced potatoes.
- Serve with crusty bread or a green salad.
