Ingredients
- 8 ounces goat cheese, room temperature
- 3 tablespoons heavy cream
- 1 tablespoon honey
- 1 teaspoon lemon zest
- 2 tablespoons olive oil (for cheese)
- 1/4 teaspoon salt (for cheese)
- 1/4 teaspoon black pepper (for cheese)
- 1 French baguette, sliced into 24 pieces on a bias
- 3 tablespoons olive oil (for crostini)
- 1 garlic clove, halved
- Salt and pepper to taste (for crostini)
- 8 slices turkey bacon
- 3 tablespoons balsamic glaze
- 2 tablespoons fresh thyme leaves
- 1/2 cup pomegranate arils
- 2 tablespoons chopped toasted walnuts
Instructions
- Preheat your oven to 400°F and line two baking sheets with parchment paper.
- Arrange the turkey bacon slices on one prepared baking sheet in a single layer and bake for 12 to 15 minutes until crispy and golden brown, flipping halfway through.
- While the turkey bacon cooks, brush the baguette slices on both sides with olive oil, arrange on the second baking sheet, and toast in the oven for 8 to 10 minutes until golden and crispy, flipping once.
- Remove the toasted crostini from the oven and immediately rub one side of each slice with the cut side of the garlic clove for subtle flavor.
- Make the whipped goat cheese by combining the goat cheese, heavy cream, honey, lemon zest, olive oil, salt, and pepper in a medium bowl, then beat with a hand mixer on medium speed for 2 to 3 minutes until smooth and fluffy.
- Once the turkey bacon is crispy and cooled slightly, chop it into small pieces.
- Spread about 1 tablespoon of whipped goat cheese onto each crostini slice.
- Top each crostini with chopped crispy turkey bacon, a few pomegranate arils, and a sprinkle of toasted walnuts.
- Drizzle each crostini with balsamic glaze and garnish with fresh thyme leaves.
- Arrange on a serving platter and serve immediately, or keep the components separate and assemble just before serving for maximum crispiness.
Notes
- Bring goat cheese to room temperature for at least 30 minutes before whipping to ensure a smooth, creamy texture without lumps.
- Toast the baguette slices until they are deeply golden; pale bread will become soggy quickly under the toppings.
- Assemble crostini no more than 30 minutes before serving to maintain the crispiest texture.
- Double the whipped goat cheese recipe and save extra in the fridge for spreading on sandwiches or tossing with pasta.
- Make the balsamic glaze more intense by reducing balsamic vinegar in a small saucepan over medium heat for 8 to 10 minutes until thickened.
- Store components separately for best results. Keep whipped goat cheese in an airtight container in the refrigerator for up to 3 days. Store crispy turkey bacon in a sealed container with paper towels between layers for up to 3 days. Store toasted crostini in an airtight container at room temperature for up to 2 days. Assemble just before serving.
