Description

Ingredients

  • 8 ounces goat cheese, room temperature
  • 3 tablespoons heavy cream
  • 1 tablespoon honey

  • 1 French baguette, sliced into 24 pieces on a bias

  • 8 slices turkey bacon
  • 3 tablespoons balsamic glaze
  • 2 tablespoons fresh thyme leaves
  • 1/2 cup pomegranate arils
  • 2 tablespoons chopped toasted walnuts


Instructions

  1. Preheat your oven to 400°F and line two baking sheets with parchment paper.
  2. Arrange the turkey bacon slices on one prepared baking sheet in a single layer and bake for 12 to 15 minutes until crispy and golden brown, flipping halfway through.
  3. While the turkey bacon cooks, brush the baguette slices on both sides with olive oil, arrange on the second baking sheet, and toast in the oven for 8 to 10 minutes until golden and crispy, flipping once.
  4. Remove the toasted crostini from the oven and immediately rub one side of each slice with the cut side of the garlic clove for subtle flavor.
  5. Make the whipped goat cheese by combining the goat cheese, heavy cream, honey, lemon zest, olive oil, salt, and pepper in a medium bowl, then beat with a hand mixer on medium speed for 2 to 3 minutes until smooth and fluffy.
  6. Once the turkey bacon is crispy and cooled slightly, chop it into small pieces.
  7. Spread about 1 tablespoon of whipped goat cheese onto each crostini slice.
