Description
Crispy smoky roasted potatoes seasoned with paprika, garlic, and thyme. Roast these potatoes until they are golden brown and perfectly crisp. They make a flavorful side for any meal.
Ingredients
- 2 pounds red or Yukon Gold potatoes, cut into wedges
- 3 tablespoons olive oil
- 1 ½ teaspoons smoked paprika
- ½ teaspoon cayenne pepper (optional)
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- ¾ teaspoon kosher salt
- ½ teaspoon black pepper
- 1 tablespoon chopped fresh parsley, for garnish
Instructions
- Preheat your oven to 425°F. Line a large baking sheet with parchment paper.
- Wash and cut potatoes into wedges. Pat them dry completely with a towel.
- In a large bowl, mix the olive oil, smoked paprika, cayenne (if using), garlic powder, thyme, salt, and pepper.
- Add the potato wedges to the bowl and toss them until they are coated evenly.
- Spread the potatoes in a single layer on the baking sheet, placing the cut side down for the best crispness.
- Roast for 30 to 35 minutes. Flip the potatoes halfway through the cooking time. Cook until they are golden brown and crisp.
- Take the potatoes out of the oven and sprinkle them with fresh parsley. Serve immediately.
Notes
- For extra crispiness, preheat your baking sheet in the oven for 5 minutes before adding the potatoes.
