Ingredients

  • Olive oil spray
  • 2 medium zucchini (about 1 pound)
  • ¾ teaspoon kosher salt, divided
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ cup grated parmesan


Instructions

  1. Preheat your oven to 425°F. Line a baking sheet with parchment paper and spray with olive oil.
  2. Slice the zucchini into very thin ⅛-inch rounds.
  3. Sprinkle the slices with ½ teaspoon of salt and let them sit in a colander for 30 minutes to remove excess water. Rinse and pat them dry with paper towels.
  4. Arrange the zucchini slices in a single layer on the prepared baking sheet, spray with olive oil, and bake for 15 minutes.
  5. Remove from oven and sprinkle with the remaining salt, pepper, garlic powder, and parmesan cheese.
  6. Return to the oven for another 15-20 minutes, until golden brown and crispy.
