Ingredients
- 4 boneless beef cutlets, about 1-inch thick
- 1 large egg
- 1/2 cup pork rind crumbs (crushed pork rinds)
- 1/2 cup finely grated Parmesan cheese
- 1 tsp dried parsley
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp avocado oil
- 1 tbsp butter
Instructions
- Preheat your oven to 350°F (175°C). Pat the beef cutlets dry with a paper towel.
- In a small, shallow bowl, whisk the egg.
- In a separate medium-sized shallow bowl, mix together the pork rind crumbs, grated Parmesan cheese, dried parsley, garlic powder, salt, and pepper.
- Dip each beef cutlet first into the whisked egg, ensuring both sides are coated, then immediately dredge the cutlet in the Parmesan mixture. Press gently to make sure the coating sticks evenly.
- In a large ovenproof skillet, heat the avocado oil and butter over medium-high heat until the butter is melted and sizzling.
- Carefully place the crusted cutlets in the skillet. Fry for about 2-3 minutes per side, until the crust is golden brown and crispy.
- Transfer the entire skillet to the preheated oven. Bake for 15-20 minutes, or until the beef is cooked through to your desired doneness.
- Once cooked, remove the skillet from the oven and let the cutlets rest in the pan for 5 minutes before serving.
