Golden on the outside and tender on the inside, these baked zucchini fries have a flavorful parmesan coating. They are a lighter snack or side dish, easy to prepare and perfect for dipping.
Ingredients
- 2 medium zucchini, cut into fry shapes
- 1/2 cup all purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Preheat your oven to 425°F and line a baking sheet with parchment paper.
- Set up three bowls. Place flour in one, beaten eggs in another, and breadcrumbs mixed with parmesan cheese, garlic powder, paprika, salt, and black pepper in the third.
- Dip zucchini pieces into the flour, then the beaten eggs, and finally the breadcrumb mixture. Press gently to ensure they are coated.
- Arrange the coated zucchini fries on the prepared baking sheet in a single layer.
- Lightly spray the fries with cooking spray to help them crisp up.
- Bake for 20 to 25 minutes, flipping them halfway through, until they are golden and crispy.
- Serve immediately.
Notes
- For extra crispiness, place the fries on a wire rack set over the baking sheet.
- Serve with your favorite dipping sauce.
