Description

Golden on the outside and tender on the inside, these baked zucchini fries have a flavorful parmesan coating. They are a lighter snack or side dish, easy to prepare and perfect for dipping.


Ingredients

  • 2 medium zucchini, cut into fry shapes
  • 1/2 cup all purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray


Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. Set up three bowls. Place flour in one, beaten eggs in another, and breadcrumbs mixed with parmesan cheese, garlic powder, paprika, salt, and black pepper in the third.
  3. Dip zucchini pieces into the flour, then the beaten eggs, and finally the breadcrumb mixture. Press gently to ensure they are coated.
  4. Arrange the coated zucchini fries on the prepared baking sheet in a single layer.
  5. Lightly spray the fries with cooking spray to help them crisp up.
  6. Bake for 20 to 25 minutes, flipping them halfway through, until they are golden and crispy.
  7. Serve immediately.

  • For extra crispiness, place the fries on a wire rack set over the baking sheet.
