Description

Golden, crispy baked parmesan potato rounds seasoned with fresh herbs. This is a quick and flavorful side dish that pairs well with any meal.


Ingredients

  • 6 medium Yukon Gold or russet potatoes, peeled and sliced into ¼-inch rounds
  • 1 tablespoon all-purpose flour
  • ⅓ cup freshly grated parmesan cheese
  • 2 tablespoons finely chopped parsley
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 3 tablespoons olive oil


Instructions

  1. Preheat oven to 400°F and line a large baking sheet with parchment paper.
  2. Place potato slices in a bowl of cold water and let soak for 20 minutes to remove excess starch. Drain and pat completely dry with a clean towel.
  3. In a shallow dish, combine flour, parmesan cheese, parsley, salt, and pepper. Mix well.
  4. Brush one side of each potato round with olive oil, then press it into the parmesan mixture.
  5. Place on the prepared baking sheet, coated side down.
  6. Brush the tops lightly with remaining olive oil and sprinkle with extra parmesan mixture.
  7. Roast for 25 minutes until golden and crisp.
  8. For an extra-crispy finish, broil for 2 to 3 minutes, watching closely to avoid burning.
  9. Sprinkle with extra parsley and a pinch of salt before serving warm.

  • For more flavor, add ½ teaspoon garlic powder or a pinch of smoked paprika to the parmesan mixture.
