Ingredients
- 2 lbs chicken wings (flats and drumettes separated, tips discarded)
- 1½ tsp baking powder (NOT baking soda)
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp smoked paprika (optional)
- Nonstick cooking spray
Instructions
- Pat wings very dry with paper towels. This step creates the crispiness without breading.
- In a large bowl, toss wings with baking powder, salt, pepper, garlic powder, and smoked paprika until they are evenly coated.
- Preheat your air fryer to 400°F (200°C) for 3–4 minutes. Lightly spray the basket with nonstick spray.
- Arrange wings in a single layer in the fryer basket. Leave space between pieces for air circulation.
- Air fry for 24–26 minutes. Flip or shake the basket halfway through cooking. Cook until wings are deep golden, crisp, and register 165°F (74°C) internally.
- For extra crunch, increase the temperature to 425°F for the final 2–3 minutes.
- Serve immediately plain, or toss with your preferred zero-carb wing sauce.
Notes
- Baking powder, not baking soda, reacts to create the ultra-crispy skin without adding starch or carbs.
- Do not overcrowd the basket. Cook in batches if necessary to maintain the best airflow and texture.
