Ingredients

  • 2 lbs chicken wings (flats and drumettes separated, tips discarded)
  • 1½ tsp baking powder (NOT baking soda)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp smoked paprika (optional)
  • Nonstick cooking spray


Instructions

  1. Pat wings very dry with paper towels. This step creates the crispiness without breading.
  2. In a large bowl, toss wings with baking powder, salt, pepper, garlic powder, and smoked paprika until they are evenly coated.
  3. Preheat your air fryer to 400°F (200°C) for 3–4 minutes. Lightly spray the basket with nonstick spray.
  4. Arrange wings in a single layer in the fryer basket. Leave space between pieces for air circulation.
  5. Air fry for 24–26 minutes. Flip or shake the basket halfway through cooking. Cook until wings are deep golden, crisp, and register 165°F (74°C) internally.

  • Baking powder, not baking soda, reacts to create the ultra-crispy skin without adding starch or carbs.
