Crispy, bite-sized shrimp alfredo rolls perfect for a special treat.
Ingredients
- 1 lb shrimp, peeled and deveined
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 1 tbsp olive oil
- 1 cup Alfredo sauce
- 1 cup shredded mozzarella cheese
- 6 small flour tortillas
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1.5 cups seasoned breadcrumbs
- Vegetable oil for frying
- Fresh parsley, chopped, for garnish
Instructions
- Season and cook the shrimp by tossing them with smoked paprika, garlic powder, salt, and pepper. Heat olive oil in a skillet and sauté the shrimp for 2-3 minutes until just pink.
- In a mixing bowl, combine the Alfredo sauce and shredded mozzarella. Gently fold in the cooked shrimp.
- Spoon a few tablespoons of the shrimp Alfredo mixture into the center of each tortilla and roll them up tightly into small burritos.
- Set up a breading station. First, coat each burrito completely in flour, then dip it into the beaten eggs, and finally, roll it in the seasoned breadcrumbs until it’s fully crusted.
- Heat vegetable oil in a pot to 350°F (175°C). Fry each burrito for 3-4 minutes per side until it’s golden brown and crispy. Drain on paper towels, garnish with fresh parsley, and serve immediately.
