Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 ounces penne pasta
  • 1 cup heavy cream
  • 1 cup fresh spinach leaves
  • 1/2 cup sun-dried tomatoes in oil
  • 3 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Olive oil for cooking
  • Salt and pepper to taste


Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Season chicken breasts with salt and pepper, cooking each side for about 6–7 minutes until golden brown and cooked through. Remove from skillet and slice into strips.
