Ingredients

  • 1 cup dry orzo pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 2 cups low sodium vegetable broth
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried Italian seasoning
  • 2 cups fresh spinach
  • 1/2 cup grated parmesan cheese


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute until fragrant.
  2. Stir in orzo and toast for 1 to 2 minutes, stirring frequently.
  3. Pour in vegetable broth and milk. Add salt, black pepper, and Italian seasoning. Stir well.
  4. Bring to a gentle simmer and cook for 10 to 12 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
  5. Stir in fresh spinach and cook until wilted, about 1 to 2 minutes.
  6. Add parmesan cheese and stir until melted and creamy.
