Ingredients
- 1 cup dry orzo pasta
- 2 tablespoons olive oil
- 3 cloves garlic minced
- 2 cups low sodium vegetable broth
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon dried Italian seasoning
- 2 cups fresh spinach
- 1/2 cup grated parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute until fragrant.
- Stir in orzo and toast for 1 to 2 minutes, stirring frequently.
- Pour in vegetable broth and milk. Add salt, black pepper, and Italian seasoning. Stir well.
- Bring to a gentle simmer and cook for 10 to 12 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
- Stir in fresh spinach and cook until wilted, about 1 to 2 minutes.
- Add parmesan cheese and stir until melted and creamy.
