Description
A satisfying soup with cheese tortellini, savory sausage, and a rich, velvety broth. This is a quick weeknight comfort meal.
Ingredients
- 1 pound ground Italian chicken sausage
- 1 tablespoon olive oil
- 1 small onion diced
- 3 cloves garlic minced
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 half teaspoon salt
- 1 half teaspoon black pepper
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 package cheese tortellini about 9 ounces
- 1 half cup grated parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat. Cook the chicken sausage, breaking it apart, until browned and cooked through.
- Add diced onion and cook for 3 to 4 minutes until softened. Stir in garlic, basil, oregano, salt, and pepper and cook for 1 minute until fragrant.
- Pour in the chicken broth and bring to a gentle boil.
- Add the tortellini and cook according to package directions, usually about 4 to 5 minutes, until tender.
- Reduce heat to low and stir in the heavy cream.
- Add the spinach and cook for 2 to 3 minutes until wilted.
- Stir in parmesan cheese until melted and the soup is creamy.
- Taste and adjust seasoning if needed. Serve warm.
Notes
- Add the tortellini just before serving to prevent it from becoming too soft if you reheat leftovers.
