Description

Tender pasta tossed with seasoned ground beef, zesty tomatoes with green chilies, and a rich cheddar cheese sauce. A comforting one-pot dinner ready in 45 minutes.


Ingredients

  • 12 ounces rotini or penne pasta
  • 1 tablespoon olive oil
  • 1 pound ground beef, 85% lean
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 1 can (10 ounces) diced tomatoes with green chilies, undrained
  • 1 can (10.5 ounces) condensed cream of mushroom soup
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons sliced green onions


Instructions

  1. Bring a large pot of salted water to a boil over high heat. Add pasta and cook according to package directions until al dente, about 10 to 12 minutes. Drain and set aside.
  2. While pasta cooks, heat olive oil in a large 12-inch deep skillet over medium-high heat until shimmering.
  3. Add diced onion to skillet and cook for 3 minutes, stirring occasionally, until softened and translucent. Stir in minced garlic and cook for 30 seconds until fragrant.
  4. Add ground beef to skillet, breaking it into small crumbles with a wooden spoon. Cook for 8 to 10 minutes until beef is browned throughout with no pink remaining and reaches an internal temperature of 160°F. Drain excess fat if needed.
  5. Stir in diced tomatoes with green chilies and cream of mushroom soup, mixing until fully combined with the beef.
  6. Pour in heavy cream and bring mixture to a gentle simmer. Cook for 5 minutes, stirring occasionally, until sauce thickens slightly and coats the back of a spoon.
  7. Reduce heat to low and add shredded cheddar cheese in three batches, stirring constantly after each addition until cheese melts completely into a smooth sauce. Season with salt and black pepper.
  8. Add drained pasta to the skillet and toss gently with tongs until every piece is coated in creamy sauce. Sprinkle with sliced green onions and serve immediately.
