Ingredients
- 2 tablespoons unsalted butter
- 4 cloves garlic minced
- 0.5 teaspoon kosher salt
- 0.5 teaspoon dried oregano
- 0.5 teaspoon crushed red pepper flakes
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon black pepper
- 0.5 cup sun-dried tomatoes chopped
- 0.75 cup vegetable broth
- 2 cans butter beans 15 ounces each drained and rinsed
- 1 cup fresh spinach roughly chopped
- 1 cup heavy cream
- 0.5 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil
Instructions
- Heat butter in a large skillet over medium heat.
- Add garlic, salt, oregano, crushed red pepper flakes, smoked paprika, and black pepper. Cook for about 2 minutes until fragrant.
- Stir in sun-dried tomatoes, vegetable broth, and butter beans. Simmer uncovered for 5 minutes, stirring occasionally.
- Reduce heat to low and stir in spinach until just wilted.
- Add heavy cream and Parmesan cheese and stir until the sauce is smooth and creamy.
- Remove from heat and stir in fresh basil.
- Serve warm with crusty bread, over rice, or spooned over pasta.
Notes
- For a thicker sauce, reduce the broth slightly and simmer an extra minute before adding cream.
