Ingredients
- 4 boneless skinless chicken breasts (6 ounces each, about 1 inch thick)
- 1 tablespoon olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 (4 ounce) can mild chopped green chiles, drained
- 2 tablespoons taco seasoning
- 2 tablespoons fresh lime juice
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat your oven to 375 degrees F. Lightly brush a 9 by 13 inch baking dish with olive oil.
- Pat the chicken breasts dry and season both sides with salt and black pepper. Place them in a single layer in the prepared baking dish.
- In a medium bowl, stir together sour cream, shredded cheddar, green chiles, taco seasoning, lime juice, and black pepper until fully combined.
- Spoon the creamy mixture evenly over the chicken breasts, spreading to cover the tops completely.
- Bake uncovered for 28 to 35 minutes until the chicken reaches an internal temperature of 165 degrees F in the thickest part.
- Remove from the oven and let rest for 5 minutes to allow the sauce to thicken slightly.
- Sprinkle with chopped cilantro before serving.
