Description
Creamy garlic chicken ramen made in one pot with tender chicken, rich broth, and noodles for an easy comforting dinner in 30 minutes.
Ingredients
- 1 pound boneless skinless chicken breast, sliced into thin strips
- 2 tablespoons olive oil
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 4 garlic cloves, minced
- 4 cups low sodium chicken broth
- 1/4 cup low sodium soy sauce
- 1 cup heavy cream
- 2 packs ramen noodles, seasoning packets discarded
- 2 green onions, sliced
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Season the chicken strips with kosher salt and black pepper. Add the chicken to the pot and cook for 5 to 7 minutes, stirring occasionally, until golden brown and fully cooked to an internal temperature of 165 degrees Fahrenheit.
- Transfer the cooked chicken to a plate and reduce the heat to medium-low.
- Add the minced garlic to the same pot and cook for 30 to 60 seconds, stirring constantly, until fragrant.
- Pour in the chicken broth and soy sauce. Stir well and bring the mixture to a gentle simmer for 5 minutes.
- Add the ramen noodles and cook for 3 to 4 minutes until tender but still slightly firm.
- Lower the heat to low and slowly stir in the heavy cream until fully combined. Do not allow the broth to boil after adding the cream.
- Return the cooked chicken to the pot and simmer gently for 1 minute until warmed through.
- Divide the noodles and broth among serving bowls and top with sliced green onions.
- Serve immediately while hot and creamy.
