Description

Creamy garlic chicken ramen with tender chicken and soft boiled eggs. A rich, cozy bowl perfect for easy dinners.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups low sodium chicken broth
  • 1 cup whole milk
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 packs ramen noodles
  • 2 cups fresh spinach
  • 1/2 cup shredded carrots
  • 2 green onions, sliced
  • 4 large eggs
  • 1 teaspoon sesame seeds


Instructions

  1. Bring a small pot of water to a gentle boil. Carefully add eggs and cook for 7 minutes for soft centers. Transfer to an ice water bath, cool, peel, and set aside.
  2. Season chicken breasts with salt, black pepper, and garlic powder. Heat olive oil in a skillet over medium heat and cook chicken for 6 to 7 minutes per side until fully cooked and golden. The internal temperature should reach 165 degrees F. Rest for 5 minutes, then slice.
  3. In a large pot, heat olive oil over medium heat. Add minced garlic and grated ginger and cook for 1 to 2 minutes until fragrant.
  4. Pour in chicken broth, milk, soy sauce, and sesame oil. Bring to a gentle simmer.
  5. Add ramen noodles and cook for 3 to 4 minutes until tender.
  6. Stir in spinach and shredded carrots and cook for 1 to 2 minutes until the spinach wilts.
  7. Divide noodles and broth into bowls. Top with sliced chicken.
  8. Cut soft boiled eggs in half and place on top of each bowl.
  9. Garnish with green onions and sesame seeds before serving.

  • For extra creaminess, stir the broth gently while simmering and avoid boiling after adding milk to keep the texture smooth.
