Ingredients
- 2 boneless skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups low sodium chicken broth
- 1 cup whole milk
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 packs ramen noodles
- 2 cups fresh spinach
- 1/2 cup shredded carrots
- 2 green onions, sliced
- 4 large eggs
- 1 teaspoon sesame seeds
Instructions
- Bring a small pot of water to a gentle boil. Carefully add eggs and cook for 7 minutes for soft centers. Transfer to an ice water bath, cool, peel, and set aside.
- Season chicken breasts with salt, black pepper, and garlic powder. Heat olive oil in a skillet over medium heat and cook chicken for 6 to 7 minutes per side until fully cooked and golden. The internal temperature should reach 165 degrees F. Rest for 5 minutes, then slice.
- In a large pot, heat olive oil over medium heat. Add minced garlic and grated ginger and cook for 1 to 2 minutes until fragrant.
- Pour in chicken broth, milk, soy sauce, and sesame oil. Bring to a gentle simmer.
- Add ramen noodles and cook for 3 to 4 minutes until tender.
- Stir in spinach and shredded carrots and cook for 1 to 2 minutes until the spinach wilts.
- Divide noodles and broth into bowls. Top with sliced chicken.
- Cut soft boiled eggs in half and place on top of each bowl.
- Garnish with green onions and sesame seeds before serving.

- For extra creaminess, stir the broth gently while simmering and avoid boiling after adding milk to keep the texture smooth.
