Description
Creamy crockpot Cajun butter chicken with bold spices and tender chicken. An easy, comforting slow cooker meal for busy days.
Ingredients
- 2 pounds boneless skinless chicken breasts
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon Cajun seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 tablespoons unsalted butter
- 1 cup low sodium chicken broth
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 tablespoons chopped fresh parsley
- Cooked rice or pasta for serving
Instructions
- Place chicken breasts in the crockpot. Season with salt, pepper, Cajun seasoning, garlic powder, and onion powder.
- Add butter on top of the chicken. Pour in chicken broth and heavy cream.
- Sprinkle in parmesan cheese, paprika, and dried thyme.
- Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken is tender.
- Remove chicken and shred into large pieces using two forks.
- Return shredded chicken to the crockpot and stir to coat in the sauce.
- Cook for an additional 10 minutes to thicken slightly.
- Taste and adjust seasoning if needed.
- Serve hot over cooked rice or pasta. Spoon extra sauce on top.
- Garnish with chopped parsley before serving.
Notes
- For a thicker sauce, leave the lid slightly open during the last 15 minutes of cooking to allow excess moisture to evaporate.
