Description

Creamy crockpot Cajun butter chicken with bold spices and tender chicken. An easy, comforting slow cooker meal for busy days.


Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 4 tablespoons unsalted butter
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 2 tablespoons chopped fresh parsley
  • Cooked rice or pasta for serving


Instructions

  1. Place chicken breasts in the crockpot. Season with salt, pepper, Cajun seasoning, garlic powder, and onion powder.
  2. Add butter on top of the chicken. Pour in chicken broth and heavy cream.
  3. Sprinkle in parmesan cheese, paprika, and dried thyme.
  4. Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours until chicken is tender.
  5. Remove chicken and shred into large pieces using two forks.
  6. Return shredded chicken to the crockpot and stir to coat in the sauce.
  7. Cook for an additional 10 minutes to thicken slightly.
  8. Taste and adjust seasoning if needed.
  9. Serve hot over cooked rice or pasta. Spoon extra sauce on top.
  10. Garnish with chopped parsley before serving.

Notes

  • For a thicker sauce, leave the lid slightly open during the last 15 minutes of cooking to allow excess moisture to evaporate.
