Description
Creamy cheddar Rotel style queso dip with beef sausage and tomatoes. An easy stovetop party dip ready in 15 minutes.
Ingredients
- 1 pound beef sausage
- 16 ounces processed cheddar cheese block cut into cubes
- 1 10 ounce can diced tomatoes with green chiles undrained
- 1/4 cup whole milk
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
Instructions
- Heat a large skillet over medium heat. Add the beef sausage and cook for 6 to 8 minutes, breaking it into crumbles, until fully browned. Drain excess grease if needed.
- Reduce heat to medium low. Add the cubed processed cheddar cheese to the skillet.
- Pour in the undrained diced tomatoes with green chiles.
- Stir frequently as the cheese melts. Add milk, garlic powder, and black pepper. Continue stirring until smooth and fully combined, about 4 to 6 minutes.
- Once the dip is creamy and heated through, remove from heat.
- Serve immediately with tortilla chips, pretzel bites, or spooned over nachos.

- Cook ground beef sausage to an internal temperature of 160 degrees F as measured with a meat thermometer to ensure it is safe to eat.
