Description

Creamy cheddar Rotel style queso dip with beef sausage and tomatoes. An easy stovetop party dip ready in 15 minutes.


Ingredients

  • 1 pound beef sausage
  • 16 ounces processed cheddar cheese block cut into cubes
  • 1 10 ounce can diced tomatoes with green chiles undrained
  • 1/4 cup whole milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper


Instructions

  1. Heat a large skillet over medium heat. Add the beef sausage and cook for 6 to 8 minutes, breaking it into crumbles, until fully browned. Drain excess grease if needed.
  2. Reduce heat to medium low. Add the cubed processed cheddar cheese to the skillet.
  3. Pour in the undrained diced tomatoes with green chiles.
  4. Stir frequently as the cheese melts. Add milk, garlic powder, and black pepper. Continue stirring until smooth and fully combined, about 4 to 6 minutes.
  5. Once the dip is creamy and heated through, remove from heat.
  6. Serve immediately with tortilla chips, pretzel bites, or spooned over nachos.
