Description

Tender shrimp seasoned with Cajun spices served over creamy, buttery grits, topped with a savory garlic butter sauce. This Southern-inspired dish is perfect for any occasion.


Ingredients

  • For the grits: 4 cups chicken broth, 1 cup stone ground grits, 1 cup shredded sharp cheddar cheese, 2 tablespoons unsalted butter, 1/2 teaspoon sea salt, 1/4 teaspoon black pepper
  • For the shrimp: 1 1/2 pounds large shrimp peeled and deveined, 2 tablespoons olive oil, 2 tablespoons unsalted butter, 4 cloves garlic minced, 1 tablespoon Cajun seasoning, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper, 1/2 teaspoon sea salt, 1 tablespoon fresh lemon juice, 2 tablespoons chopped fresh parsley


Instructions

  1. In a medium saucepan, bring the chicken broth to a gentle boil over medium heat.
  2. Slowly whisk in the grits. Reduce the heat to low and cook, stirring often, for 20 to 25 minutes until thick and creamy.
  3. Stir the cheddar cheese, butter, sea salt, and black pepper into the cooked grits. Cover and keep warm.
  4. Pat the shrimp dry with paper towels. Toss with Cajun seasoning, smoked paprika, cayenne pepper, and sea salt.
  5. Heat the olive oil and butter in a large skillet over medium-high heat.
  6. Add the garlic and cook for 30 seconds until fragrant.
  7. Add the shrimp and cook for 2 to 3 minutes per side until pink and fully cooked.
  8. Stir in the lemon juice and fresh parsley.
  9. Spoon the creamy grits into bowls and top with the Cajun shrimp and garlic butter sauce from the skillet.

Notes

  • For extra creamy grits, stir them frequently while cooking and add a splash of warm broth if they become too thick.
