Ingredients
- For the grits: 4 cups chicken broth, 1 cup stone ground grits, 1 cup shredded sharp cheddar cheese, 2 tablespoons unsalted butter, 1/2 teaspoon sea salt, 1/4 teaspoon black pepper
- For the shrimp: 1 1/2 pounds large shrimp peeled and deveined, 2 tablespoons olive oil, 2 tablespoons unsalted butter, 4 cloves garlic minced, 1 tablespoon Cajun seasoning, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper, 1/2 teaspoon sea salt, 1 tablespoon fresh lemon juice, 2 tablespoons chopped fresh parsley
Instructions
- In a medium saucepan, bring the chicken broth to a gentle boil over medium heat.
- Slowly whisk in the grits. Reduce the heat to low and cook, stirring often, for 20 to 25 minutes until thick and creamy.
- Stir the cheddar cheese, butter, sea salt, and black pepper into the cooked grits. Cover and keep warm.
- Pat the shrimp dry with paper towels. Toss with Cajun seasoning, smoked paprika, cayenne pepper, and sea salt.
- Heat the olive oil and butter in a large skillet over medium-high heat.
- Add the garlic and cook for 30 seconds until fragrant.
- Add the shrimp and cook for 2 to 3 minutes per side until pink and fully cooked.
- Stir in the lemon juice and fresh parsley.
- Spoon the creamy grits into bowls and top with the Cajun shrimp and garlic butter sauce from the skillet.

- For extra creamy grits, stir them frequently while cooking and add a splash of warm broth if they become too thick.
