Description

A bold, comforting one-pan meal with tender chicken, pasta, and a rich spiced sauce ready in under 40 minutes.


Ingredients

  • 1 pound boneless skinless chicken breast, cut into 1-inch cubes
  • 2 teaspoons Cajun seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup diced yellow onion
  • 1 cup diced red bell pepper
  • 1 cup heavy cream
  • 1 cup low sodium chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Cook penne pasta in salted boiling water according to package directions until al dente. Drain and set aside.
  2. Season the chicken cubes with Cajun seasoning, salt, and black pepper.
  3. Heat a large skillet over medium-high heat and add olive oil. Cook the chicken for 6 to 8 minutes, turning occasionally, until browned and cooked through. Remove and set aside.
  4. In the same skillet, add olive oil, then sauté onion and red bell pepper for 4 to 5 minutes until softened.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Pour in chicken broth and heavy cream, then stir in Cajun seasoning, paprika, salt, and black pepper. Bring to a gentle simmer.
  7. Add cooked pasta and chicken back into the skillet. Toss to coat evenly in the sauce.
  8. Stir in Parmesan cheese and cook for 2 to 3 minutes until the sauce thickens slightly and coats the pasta.
  9. Remove from heat and sprinkle with chopped parsley before serving.
