Ingredients
- 1 pound boneless skinless chicken breast, cut into 1-inch cubes
- 2 teaspoons Cajun seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 8 ounces penne pasta
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup diced yellow onion
- 1 cup diced red bell pepper
- 1 cup heavy cream
- 1 cup low sodium chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Cajun seasoning
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh parsley
Instructions
- Cook penne pasta in salted boiling water according to package directions until al dente. Drain and set aside.
- Season the chicken cubes with Cajun seasoning, salt, and black pepper.
- Heat a large skillet over medium-high heat and add olive oil. Cook the chicken for 6 to 8 minutes, turning occasionally, until browned and cooked through. Remove and set aside.
- In the same skillet, add olive oil, then sauté onion and red bell pepper for 4 to 5 minutes until softened.
- Add minced garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and heavy cream, then stir in Cajun seasoning, paprika, salt, and black pepper. Bring to a gentle simmer.
- Add cooked pasta and chicken back into the skillet. Toss to coat evenly in the sauce.
- Stir in Parmesan cheese and cook for 2 to 3 minutes until the sauce thickens slightly and coats the pasta.
- Remove from heat and sprinkle with chopped parsley before serving.
