Description
This chicken stroganoff is creamy, comforting, and baked to perfection with tender chicken and mushrooms. It is an easy chicken stroganoff recipe perfect for family dinners.
Ingredients
- 1 pound boneless skinless chicken breasts cut into 1 inch pieces
- 2 tablespoons olive oil
- 1 medium yellow onion diced
- 2 cups mushrooms sliced
- 2 teaspoons garlic powder
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 2 cups chicken broth
- 1 cup cream of mushroom soup
- 1 cup sour cream
- 2 cups dry egg noodles cooked al dente
Instructions
- Preheat the oven to 350°F and lightly grease a 9 by 13 inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add the onion and cook 4 minutes until softened.
- Add mushrooms and cook 5 minutes until tender and lightly browned.
- Add the chicken pieces, garlic powder, salt, and black pepper. Cook 6 to 8 minutes until the chicken is no longer pink.
- Pour in the chicken broth and simmer 3 minutes to combine flavors.
- In a bowl, stir together the cream of mushroom soup and sour cream until smooth.
- Add the sauce mixture to the skillet and stir gently until fully combined.
- Add the cooked egg noodles and fold to coat evenly.
- Transfer everything to the prepared baking dish, cover with foil, and bake 25 minutes.
- Remove foil and bake 10 more minutes until bubbly. Chicken must reach an internal temperature of 165°F before serving.

- For extra creaminess, stir gently before serving to redistribute the sauce.
