Description

This chicken stroganoff is creamy, comforting, and baked to perfection with tender chicken and mushrooms. It is an easy chicken stroganoff recipe perfect for family dinners.


Ingredients

  • 1 pound boneless skinless chicken breasts cut into 1 inch pieces
  • 2 tablespoons olive oil
  • 1 medium yellow onion diced
  • 2 cups mushrooms sliced
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup cream of mushroom soup
  • 1 cup sour cream
  • 2 cups dry egg noodles cooked al dente


Instructions

  1. Preheat the oven to 350°F and lightly grease a 9 by 13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add the onion and cook 4 minutes until softened.
  3. Add mushrooms and cook 5 minutes until tender and lightly browned.
  4. Add the chicken pieces, garlic powder, salt, and black pepper. Cook 6 to 8 minutes until the chicken is no longer pink.
  5. Pour in the chicken broth and simmer 3 minutes to combine flavors.
  6. In a bowl, stir together the cream of mushroom soup and sour cream until smooth.
  7. Add the sauce mixture to the skillet and stir gently until fully combined.
  8. Add the cooked egg noodles and fold to coat evenly.
  9. Transfer everything to the prepared baking dish, cover with foil, and bake 25 minutes.
  10. Remove foil and bake 10 more minutes until bubbly. Chicken must reach an internal temperature of 165°F before serving.
