Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 ounces rotini pasta
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Cook rotini pasta in salted water until al dente. Drain and set aside. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook for 6–7 minutes until golden and cooked through. Remove chicken and set aside.
  3. In the same skillet, melt butter and sauté minced garlic for about a minute. Add chicken broth and heavy cream, bring to a simmer. Stir in mozzarella, cheddar, and Parmesan until sauce is smooth.
  4. Return cooked chicken and rotini to the skillet. Toss until pasta and chicken are coated in sauce. Simmer for a few minutes. Garnish with parsley and serve hot.
