Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 12 ounces rotini pasta
- 1 cup heavy cream
- ½ cup chicken broth
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 4 cloves garlic, minced
- 1 tablespoon butter
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook rotini pasta in salted water until al dente. Drain and set aside. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add seasoned chicken and cook for 6–7 minutes until golden and cooked through. Remove chicken and set aside.
- In the same skillet, melt butter and sauté minced garlic for about a minute. Add chicken broth and heavy cream, bring to a simmer. Stir in mozzarella, cheddar, and Parmesan until sauce is smooth.
- Return cooked chicken and rotini to the skillet. Toss until pasta and chicken are coated in sauce. Simmer for a few minutes. Garnish with parsley and serve hot.
