Description

A no-bake butterscotch pie with a graham cracker crust, rich and creamy filling, and topped with whipped cream and caramel sauce.


Ingredients

  • 1½ cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 (3.4 oz) box instant butterscotch pudding mix
  • 1½ cups whole milk
  • 1/2 cup heavy cream
  • 1/4 cup brown sugar
  • 4 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1½ cups whipped cream or Cool Whip
  • 1/4 cup caramel sauce
  • Optional: chopped peanuts or pecans


Instructions

  1. For the crust, mix the graham cracker crumbs, sugar, and melted butter in a bowl. Press the mixture firmly into a 9-inch pie plate. Chill it in the fridge while you make the filling.
  2. In a large bowl, whisk together the pudding mix, milk, and heavy cream until it begins to thicken. In a separate bowl, beat the softened cream cheese, brown sugar, and vanilla until smooth. Combine the cream cheese mixture with the pudding and beat until fully incorporated.
  3. Pour the butterscotch filling into the prepared crust and smooth the top with a spatula. Chill the pie for at least 4 hours, or until the filling is firm.
  4. Once set, top with whipped cream, drizzle with caramel sauce, and garnish with chopped nuts if desired. Enjoy

Notes

  • This pie is best served chilled.
  • For a firmer crust, bake it for 8-10 minutes before chilling.
  • You can substitute other cookie crumbs for graham crackers.
