Description
Cranberry Whipped Feta Dip provides a creamy, tangy, and slightly sweet appetizer perfect for gatherings. It combines smooth whipped feta with a bright, homemade cranberry compote and crunchy pistachio topping.
Ingredients
- 2 cups frozen or fresh cranberries
- 1/4 cup maple syrup
- Zest and juice of one orange
- 1/4 tsp ground nutmeg
- 225 g (8oz) feta cheese (about 1 1/2 cups crumbled feta)
- 1/2 cup plain Greek yogurt
- 1/4 tsp chili flakes
- 2 tbsp olive oil
- 1/4 cup chopped pistachios
- 1-2 tbsp honey to drizzle
- Fresh thyme if desired
Instructions
- Combine cranberries, maple syrup, orange zest, orange juice, and nutmeg in a medium saucepan. Bring to a boil over medium-high heat.
- Reduce heat to medium-low and simmer for 6-10 minutes, stirring sometimes, until cranberries burst and reduce to a jam-like consistency. Remove from heat and let cool.
- Place feta cheese, Greek yogurt, chili flakes, and olive oil into a food processor. Blend on high until the mixture is smooth and creamy.
- Assemble the dip by spreading the whipped feta into a low bowl. Top with the cooled cranberry compote, chopped pistachios, honey drizzle, and fresh thyme leaves if using.
Notes
- For the best flavor, use fresh cranberries between November and January when they are in season.
- To make crostini: Preheat the oven to 400°F. Slice a baguette into 1-inch thick pieces, brush one side with olive oil, and arrange on a baking sheet. Bake for 5 minutes, flip, and bake another 5 minutes until toasted.
- You can prepare the whipped feta and cranberry mixture up to 2 days in advance. Store them separately in airtight containers in the refrigerator and allow them to reach room temperature before assembling.
- Substitute ricotta cheese for feta to achieve a milder flavor profile.
