Ingredients

  • 2 cups bread crumbs
  • 1 cup cooked turkey, shredded
  • ½ cup dried cranberries, chopped
  • ½ cup onion, finely diced
  • ½ cup celery, diced
  • ¼ cup fresh parsley, chopped
  • ¼ cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 large egg


Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking sheet with parchment paper or a light coating of oil.
  2. In a large mixing bowl, combine the bread crumbs, shredded turkey, chopped cranberries, diced onion, diced celery, and chopped parsley.
  3. Add the dried thyme, salt, and black pepper.
  4. Pour in the chicken broth and the egg. Mix everything together until well combined. If the mixture seems too dry, add a little more chicken broth, a tablespoon at a time.
  5. Use about 2 tablespoons of the mixture for each ball, rolling them into spheres. Place the balls on the prepared baking sheet.
  6. Bake for 25 minutes, or until they are golden brown and cooked through.
  7. Serve warm, with gravy or cranberry sauce on the side.
