Description

This festive cranberry rosemary mocktail combines tart cranberry juice with homemade rosemary syrup and sparkling water for a refreshing non-alcoholic drink. It offers cafe-quality results at home.

Ingredients

  • 1 cup water (for syrup)
  • 1 cup granulated sugar (for syrup)
  • 4 fresh rosemary sprigs (for syrup)
  • 1/3 cup unsweetened cranberry juice, chilled (per mocktail)
  • 1 tablespoon rosemary simple syrup (per mocktail)
  • 1 tablespoon fresh lime juice (per mocktail)
  • 3/4 cup sparkling water or club soda, chilled (per mocktail)
  • Ice cubes
  • Fresh cranberries for garnish
  • Fresh rosemary sprig for garnish
  • Lime slice for garnish

Instructions

  1. Make the rosemary simple syrup by combining water, sugar, and rosemary sprigs in a small saucepan over medium heat. Stir frequently until the sugar dissolves completely.
  2. Bring the syrup mixture to a gentle simmer. Immediately remove it from the heat. Let it steep for 30 minutes at room temperature for deep rosemary infusion.
  3. Strain the cooled syrup through a fine-mesh sieve into a clean glass jar. Discard the rosemary sprigs. Refrigerate until you need it.
  4. Fill a tall highball glass or wine glass with ice cubes. Place lime slices between the ice and the glass wall for appearance.
  5. Pour the cranberry juice, rosemary simple syrup, and fresh lime juice into the prepared glass. Stir gently with a bar spoon to mix the flavors.
  6. Slowly top with chilled sparkling water. Pour down the side of the glass to keep the carbonation.
  7. Garnish with a fresh rosemary sprig, additional fresh cranberries, and a lime wheel on the rim. Serve immediately.

Notes

  • Use 100% pure unsweetened cranberry juice for the most authentic tart flavor.
  • Make a large batch of rosemary simple syrup; it stores for up to 4 weeks in the refrigerator.
  • Chill all liquid ingredients before assembly to keep the drink cold longer.
  • Add sparkling water just before serving to maintain maximum carbonation.
  • Adjust simple syrup amount based on the tartness of your cranberry juice.
  • The syrup can flavor hot tea or yogurt.
