Ingredients
- 1 cup butter, softened
- 1 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 2 tablespoons orange juice
- 1 teaspoon orange zest
- 2 1/2 cups flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 2 cups dried cranberries
- 1 1/2 cups powdered sugar
- 3 tablespoons orange juice
- 1/2 teaspoon orange zest
Instructions
- Preheat your oven to 350°F (175°C). In a large bowl, cream together softened butter, sugar, and brown sugar until combined and light. Add egg, 2 tablespoons orange juice, and 1 teaspoon orange zest; mix well.
- In a separate bowl, combine flour, salt, and baking soda. Gradually add this dry mixture to the wet mixture, mixing until a cookie dough forms.
- Chop dried cranberries if desired. Fold cranberries into the dough. Drop tablespoonfuls of dough onto prepared cookie sheets, spaced apart.
- Bake for 8 to 10 minutes, or until edges are lightly golden. Let cookies sit on sheets for 2 minutes, then transfer to cooling racks to cool completely.
- While cookies cool, prepare icing: mix powdered sugar, 3 tablespoons orange juice, and 1/2 teaspoon orange zest until smooth.
- Drizzle icing over cooled cookies. Allow icing to harden completely. Store cookies in an airtight container.
