Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 cups dried cranberries
  • 1 1/2 cups powdered sugar
  • 3 tablespoons orange juice
  • 1/2 teaspoon orange zest


Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, cream together softened butter, sugar, and brown sugar until combined and light. Add egg, 2 tablespoons orange juice, and 1 teaspoon orange zest; mix well.
  2. In a separate bowl, combine flour, salt, and baking soda. Gradually add this dry mixture to the wet mixture, mixing until a cookie dough forms.
  3. Chop dried cranberries if desired. Fold cranberries into the dough. Drop tablespoonfuls of dough onto prepared cookie sheets, spaced apart.
  4. Bake for 8 to 10 minutes, or until edges are lightly golden. Let cookies sit on sheets for 2 minutes, then transfer to cooling racks to cool completely.
  5. While cookies cool, prepare icing: mix powdered sugar, 3 tablespoons orange juice, and 1/2 teaspoon orange zest until smooth.
  6. Drizzle icing over cooled cookies. Allow icing to harden completely. Store cookies in an airtight container.
