Ingredients

  • 1 small onion (grated or finely diced)
  • 1 ½ pounds very lean ground beef
  • 1 cup breadcrumbs (like panko)
  • 2 large eggs
  • 1/3 cup tomato ketchup
  • 2 tablespoons worcestershire sauce
  • 1/4 cup chopped fresh parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cranberry sauce
  • 1 cup tomato ketchup
  • 3 tablespoons packed brown sugar
  • 1 tablespoon freshly squeezed lemon juice


Instructions

  1. Preheat your oven to 350℉ (175℃). Line a baking sheet with parchment paper.
  2. In a large bowl, combine meatball ingredients. Mix well. Form into about 32 medium-sized meatballs.
  3. Place meatballs on the baking sheet. Bake for 20 to 25 minutes, until a meat thermometer reads 160℉.
  4. While meatballs bake, combine sauce ingredients in a large skillet. Cook over medium heat until boiling.
  5. Reduce heat, add baked meatballs to the sauce. Stir gently and cook until heated through.
  6. Garnish with fresh parsley if desired. Serve warm.
