- 6 bone-in chicken thighs, skin removed
- 1 1/2 cups long-grain white rice (basmati or jasmine), rinsed
- 1 medium onion, finely diced
- 4 cloves garlic, minced
- 3 cups very hot chicken broth or stock
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon black pepper
- Lemon wedges and chopped parsley, for serving
Instructions
- Preheat your oven to 375°F/190°C. Pat the chicken dry. Toss the chicken with paprika, oregano, thyme, 1 teaspoon salt, pepper, and 1 tablespoon olive oil. Set aside.
- In a 9×13 inch baking dish, combine the rinsed rice, diced onion, minced garlic, butter, the remaining 1 tablespoon olive oil, and the very hot chicken broth. Stir everything together well.
- Nestle the seasoned chicken thighs on top of the rice and liquid mixture. Cover the baking dish tightly with aluminum foil.
- Bake for 30 to 45 minutes, or until most of the liquid absorbs and the rice seems almost tender.
- Remove the foil. Continue baking for another 15 to 25 minutes until the chicken cooks through and the rice becomes fully tender. If you want browned chicken skin, briefly broil the dish.
- Take the dish from the oven and let it rest for 10 minutes. Fluff the rice gently with a fork, then place the chicken pieces back on top.
- Serve immediately. Sprinkle fresh parsley over the top and squeeze lemon wedges over the dish for added flavor.
