Ingredients

  • 1 tablespoon olive oil
  • 1 pound beef sirloin steak cut into 1 inch cubes
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ cup unsalted butter
  • 2 teaspoons garlic minced
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • ½ teaspoon cayenne pepper
  • 1 tablespoon fresh parsley finely chopped


Instructions

  1. Cut the steak into evenly sized 1 inch cubes and season with salt and black pepper on all sides.
  2. Heat olive oil in a large skillet over medium high heat until shimmering.
  3. Add steak bites in a single layer and sear for 2 minutes without moving to form a crust.
  4. Flip and cook another 1 to 2 minutes until the steak reaches 145°F for medium doneness, then reduce heat to medium.
  5. Add butter, garlic, lemon juice, Dijon mustard, paprika, cayenne pepper, and parsley to the skillet.
  6. Toss the steak bites in the melted butter for 1 minute until fully coated and glossy. Beef steak should reach a safe internal temperature before serving.
