Description

A protein-rich bowl featuring roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and a touch of hot honey for a balanced, flavorful meal.


Ingredients

  • 1 pound lean ground beef
  • 2 teaspoons olive oil (for beef)
  • 1 tablespoon taco seasoning
  • ¼ teaspoon black pepper
  • 2 medium sweet potatoes, peeled and cubed
  • 1 tablespoon olive oil (for potatoes)
  • ¼ teaspoon salt
  • 1 cup cottage cheese
  • 1 medium avocado, sliced
  • 2 teaspoons hot honey
  • ½ teaspoon hot sauce (optional)
  • 1 tablespoon chopped green onions


Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  2. Toss the sweet potato cubes with 1 tablespoon olive oil and salt. Spread them evenly on the sheet. Roast for 20–25 minutes, flipping halfway, until tender and caramelized.
  3. While the potatoes roast, heat a skillet over medium heat. Add 2 teaspoons olive oil and the ground beef. Cook for 6–8 minutes, breaking the beef apart, until browned and fully cooked (165°F internal temperature).
  4. Stir in the taco seasoning and 2 tablespoons water. Simmer for 1–2 minutes until the beef is coated and slightly saucy.
  5. Assemble the bowls: Place the roasted sweet potatoes in the bottom of each bowl. Add cottage cheese next.
  6. Top with the seasoned beef and avocado slices.
  7. Drizzle with hot honey and hot sauce, if using. Garnish with chopped green onions.
  8. Serve warm. Mix everything before you eat for the best flavor combination.
