A protein-rich bowl featuring roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and a touch of hot honey for a balanced, flavorful meal.
Ingredients
- 1 pound lean ground beef
- 2 teaspoons olive oil (for beef)
- 1 tablespoon taco seasoning
- ¼ teaspoon black pepper
- 2 medium sweet potatoes, peeled and cubed
- 1 tablespoon olive oil (for potatoes)
- ¼ teaspoon salt
- 1 cup cottage cheese
- 1 medium avocado, sliced
- 2 teaspoons hot honey
- ½ teaspoon hot sauce (optional)
- 1 tablespoon chopped green onions
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper.
- Toss the sweet potato cubes with 1 tablespoon olive oil and salt. Spread them evenly on the sheet. Roast for 20–25 minutes, flipping halfway, until tender and caramelized.
- While the potatoes roast, heat a skillet over medium heat. Add 2 teaspoons olive oil and the ground beef. Cook for 6–8 minutes, breaking the beef apart, until browned and fully cooked (165°F internal temperature).
- Stir in the taco seasoning and 2 tablespoons water. Simmer for 1–2 minutes until the beef is coated and slightly saucy.
- Assemble the bowls: Place the roasted sweet potatoes in the bottom of each bowl. Add cottage cheese next.
- Top with the seasoned beef and avocado slices.
- Drizzle with hot honey and hot sauce, if using. Garnish with chopped green onions.
- Serve warm. Mix everything before you eat for the best flavor combination.
