Description
A creamy, high-protein, and easy-to-bake crustless quiche with cottage cheese and spinach, perfect for brunch, meal prep, or light dinners.
Ingredients
- 1 teaspoon olive oil
- 1 small yellow onion, finely diced
- 2 cups fresh baby spinach, chopped
- 1 cup full fat cottage cheese
- 4 large eggs
- 1/4 cup whole milk
- 1 cup shredded sharp cheddar cheese, divided
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375 degrees F. Lightly grease a 9-inch pie dish or an 8×8 inch baking dish.
- Heat olive oil in a small skillet over medium heat. Add diced onion and cook for 3 to 4 minutes until softened.
- Stir in chopped spinach and cook for 1 to 2 minutes until wilted. Remove from heat and let cool slightly.
- In a large bowl, whisk together cottage cheese, eggs, milk, garlic powder, salt, and black pepper until well combined.
- Stir in the cooked onion and spinach mixture along with 3/4 cup of the shredded cheddar cheese.
- Pour the mixture into the prepared baking dish and smooth the top. Sprinkle the remaining 1/4 cup cheddar cheese evenly over the surface.
- Bake for 30 to 35 minutes until the center is set and the top is lightly golden. A knife inserted in the center should come out clean.
- Let cool for 10 minutes before slicing to allow the quiche to fully set. Serve warm or at room temperature.
